You can use either – see the Ngram. When the singular (“species of shark”) is used, it's referring to sharks generically and collectively, as a genus/type/sort/kind. With different types of bird(s) you can say různé druhy ptáků or různé druhy ptactva, so perhaps you can think of the shark equivalent as různé druhy žraloků or různé druhy “žraloctva”. [Yes, I know žraloctvo doesn't really exist in this sense.]
