prosím o vysvětlení, proč ve větě: „In case of emergency, press this button.“ NENÍ neurčitý člen před „emergency“
a ve větě: „We were shown what to do in case of AN emergency.“ tam neurčitý člen JE. Je v tom nějaké pravidlo?

Gramaticky je správně obojí. Člen lze v tomto případě vynechat, aby se fráze zkrátila. Tolik Google.

This is a style difference:
In case of emergency, press this button is headline style (HfE) and articles are omitted. It's used for notices, on signs and so on.
Similarly, we see in case of fire, break glass and many similar headline-style notices in which articles are omitted. Here's another one.
We were shown what to do in case of an emergency is normal „full-prose“ style, not headline style, so the article („an emergency“) is used.
